Chocolate Pudding
Exhausted tonight and planning meal with family for Rosh Hashana this weekend, but wanted to share this. Goose and I created it tonight when she had a spur of the moment craving for dessert after dinner.
Chocolate Pudding:
1 heaping cup raw cashews
1/4 cup coconut oil
2 tbs honey
1 1/2 tsp vanilla extract
1 cup milk (or non-dairy milk)
3 tbs unsweetened cocoa powder
1 tbs arrowroot powder
Blend together in blender until smooth. Chill in freezer for 10 minutes or fridge for about 20 minutes and serve with whipped cream and cacao nibs. *If you leave it longer, it becomes hard, almost like fudge.
It is very, very rich and is essentially a version of Nutella. Would be gorgeous in a tall, thin dessert glass or champagne flute layered with the whipped topping.

I used to be a raw vegan, years ago, so I still feel a little tug of delight when I see a raw recipe. I think I’d like to try the too hard, like fudge version, though

OH yes dear chickipea! This is an awesome version of CP because I know, from being a raw vegan in my past, just how delicious creamed cashews can be! Very cool! Thanks for sharing on the hearth n soul hop!
