Thursday Tip: Shredding Chicken
Can’t remember where I saw this… probably Pinterest!, but I used it last night with leftover chicken and it worked like a charm. I bet it would work on pot-roast as well.
Very short and sweet:
Take cooked chicken breasts and put them in the Kitchen Aid mixer with the paddle attachment (a food processor with the mixing paddle- not the blade- would probably work too.) Turn it on a low speed and the chicken shreds perfectly and almost instantly!
We used our chicken in wraps, but this would be perfect for the base of a chicken salad, burritos, etc.
