Oatmeal Raisin Muffins

I finally made muffins on a Monday again, after months of thinking about it and not doing it.  Why I can’t stick with this is beyond me!  It does make life easier.  Clearly, I need to make myself a file of only muffin recipes!  These made enough for us to have as part of breakfast for a few days, alongside some fruit and sausage.  If Goose was not eating like a teenager at the moment, I probably would have frozen a few, but she’s chomping through the pantry much like the caterpillar chomps its way through the very famous children’s book, and can currently out-eat me, which is no easy feat.  She can eat three of these in a sitting, maybe more if I would let her.


Oatmeal Raisin Muffins:
makes 12 regular-sized muffins

3 lg eggs
3/4 c whole milk (or dairy-free alternative, such as coconut milk)
1/2 c applesauce (or other pureed fruit)
1 1/2 tbs lucuma powder
3/4 c raisins
1/2 c  (Each) sorghum flour, sweet rice flour
1/4 c (Each) teff flour (I used white teff), quinoa flakes
1/2 c rolled oats (or more quinoa if you can’t eat oats, otherwise make sure oats are Certified Gluten Free!)
1/2 c coconut sugar
2 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
1 pinch fine sea salt
1 tsp (Each) cinnamon, allspice

A few extra oats or quinoa flakes for sprinkling on top

Whisk dry ingredients together to mix, then add in wet ingredients until combined.  Line muffin pan with paper cupcake liners, or grease well.  Fill to tops with batter, sprinkle extra oats or quinoa on top to decorate (if you want,) and bake at 375*F for about 22 minutes.  Let cool for a few minutes before unwrapping, or muffins will stick to paper liners.  Serve with coconut oil or butter.
